How to chuck oysters

  • 1With the hinge towards you, hold your knife blade at a centimeter from the extremity
  • 2Insert your knife blade between the two shells and move it down toward the muscle
  • 3Cut the muscle
  • 4Take off the top shell and drain the oyster.

ADVICE

You can store fresh in-shell oysters for about 10 days. Keep them flat-side up in a refrigerator at a temperature between 5° and 10°C (41 to 50°F). Do not store them directly on ice: when they are too cold, they are tasteless. You can complement oysters with lemon juice, a sauce made from shallots or ground pepper.

Freshness test : do not keep the liquor that is present when you open an oyster. The shell has to produce a new fresh liquid.

All year long : an old adage said “only eat oysters in the months with a letter "R". That was true before, when refrigeration and transport means did not exist… But now, you can enjoy eating oysters all year long !

 

RECIPES

Kerarzic hot oysters

Ingrédients

For 4 persons

  • 24 oysters (size #1 ou size #2)
  • 2 leeks
  • A knob of butter
  • 2 tbs of sourcream
  • Pepper
 

Preparation

Open oysters, take off the top shell and pour the oyster liquor in a bowl
Chop very thinly the two leeks. Stir them in a saucepan with butter. Add the oyster liquor. Let it cook very slowly to reduce.
Keep the empty shells in very hot water.
Add cream and pepper in the saucepan, and once again, let it cook very slowly.
Add the oysters (let them cook just for one minute so that they will be warm)
Clean the shells. Put an oyster in each and a tablespoon of the leek/ cream mixture.

Fried Oysters

Fried Oysters

  • 24 size #2 oysters
  • 2 separated eggs
  • 2 leveltbs of corn flour
  • Salt and pepper
 

Preparation

Drain the oysters and clean the shells. Put the oyster liquor in a bowl
Put the egg whites with a pinch of salt in a bowl and beat them.
Beat pepper, the oyster liquor and the yolks until the mixture is soft and creamy and then sift flour. Add the beaten whites.
Preheat the oil to 190°C (375°F)
Dip the oysters one by one into the dough and fry them for about 3 minutes or until they are golden brown and crispy.
Drain on paper towels. Keep in a hot place until all the oysters are fried. Serve hot with a rice salad.
